At Il Pizzaiolo, the oven called Vesuvio fires up some of the most incredible pizzas outside of Italy. As I walked in and stepped up to order, I could see the pizzaiolos busily handcrafting made-to-order pizzas behind the glass counter lit by Vesuvio herself. I decided to venture forth with an old favorite of mine: Pancetta Pizza chased with a San Pellegrino Limonata. Per usual, the pizza was incredible. Because the dough is made in-house, every day, with Italian love and technique, the crust is the most magnificent combination of outer crispiness with chewy-fluffy inside goodness. It’s my favorite part of the pie, other than the freshly grilled herb mushrooms, crispy pancetta and gooey splatters of mozzarella. When I learned Il Pizzaiolo supports local farms by only using produce grown within 100 miles, I fell even more in love. Plus, the atmosphere is always warm and friendly—and not only because of Vesuvio—owner Grayson works alongside his employees with genuine care for the customers and his pizza. Il Pizzaiolo is definitely not your run-of-the-mill pizza place, but truly an Italian indulgence.
